Looks like a female hercules beetle, Dynastes titius or Dynastes grantii. I know they both exist in the southern US, but I don't know which one of them would be found in Texas. Maybe both.
I was digging through my closet today and found a critter keeper, was thinking about catching some kind of big beetle to keep for a bit for fun
Are there any hardy species /an/ would recommend? In the southern US.
Saw one big black one about two inches long on my porch a few weeks ago

You're correct. And judging by the dark color of her elytra, it is possible she just recently got out of some damp space, like wet soil or rotten wood.
