Do corn snakes need UV light? Most people I've talked to said no, but a few have said yes. Also, how often should they eat? for an adult corn snake, I've heard once a week to once a month

UV not necessary. A light on the tank during daytime hours can be beneficial if the room it is in does not get much light, however.

One feeding every 10-14 days is just about right for full grown adult corn snake. The reason you get varying opinion on this is that corns are a very tough species and can do fine with longer gaps between meals. The 10-14 day routine is just about optimal though.
