>in long distance, but it started as a normal relationship
>gets stressed out and tries to break up
with me, saying she can't handle the pressure of the relationship
>this has happened several times but she always comes around
How do I know when she's not just "crying wolf"? This time she texted me, I don't even know if I should respond or just leave it

The best case scenario is that you get back together but you never feel any security in the relationship because your girl has proven she has a quick trigger finger on initiating breakups.
The worst case scenario is that you waste more of your precious time on this earth going back and forth with this girl only for her to one day decides she doesn't need her security blanket anymore (you) and moves on for good, leaving you bitter, broken and hoping in vain that she changes her ways.
>How do I know when she's not just "crying wolf"?
Better question, why bother being with a girl who does? Seems she is quite willing to drop the ball with that act.

Stopped reading right there
Try to have an honest discussion with her about what your relationship means to her and what it means to you. What's the most stressful part of it? Why are you still together? Who or what has to change in order to keep it intact and healthy?
If you don't have a dialogue then nothing will be diagnosed and the same problems will happen again and again until it either blows up or becomes too painful to continue any longer. And if the result of this is that you decide to end your relationship now, then it'll be the best option for both of you.

When I say she comes around I mean she apologizes for being so rash and takes it back. We've never officially broken up

Because I know it's a cry for help kind of thing. I don't react anymore, and if I wait long enough she always comes back apologizing

Most stressful part is the distance. A lot of our problems would be solved without it. Otherwise, I love her and she could be a future wife. We almost always have discussions after these episodes and they've always been cathartic and productive. But I'm tired of her pulling this on me, it stresses me the hell out too
