I've played too much videogames in my youth and fucked up my arm. Now if I use a gamepad more than an hour a day my right arm will hurt for days afterwards.

Will this influence my ability to work? I'm specifically interested in working as a baker which shouldn't be too monotonous, but I'm afraid that it will fuck with my arm too. If yes, what kind of jobs can I expect to be able to handle?

Would be worth going to a physical therapist to see if they can help you with this.
