Might not be for a relationship. My phone's camera is slightly fucked up and grinds/clicks when it activates while the camera is aimed down. Occasionally I'll hear the camera activate on apps like YouTube, stock messaging app, notes app, and Facebook even though the camera permission is disabled on all. I'd be willing to hack my phone to see when the front camera activates as well.
there's two ways I know of.
>root the phone
>be ABC or have access to their tools, which are also the tools for major corporations
rooting the phone is easy to check for and your access will likely only last until the next software update, at which point you would have to reinstall whatever app is giving you access.
you basically need to have access to the phone for like an hour for every method i know of.
youre not gonna be able to track your gf without her being able to find out. even with the best spy apps on the market, you dont scan for the app, you check to see if the phone is rooted

if you're in control of the device you can see everything it is doing because you are the one doing it
if you mean you want to see what it is doing remotely, then that is going to be extremely difficult
most phones are linux/unix based, so getting your feet wet with the command syntax would be your first step
you do this by using terminal emulation or perhaps installing your own linux distro to play around with
basically, once you get familiar with how to do that, you're going to have to figure out a way to get a remote access trojan or somesuch onto the device running as a server that will connect to your client remotely
you have to be more specific than being "aware of everything it is doing"
for one, phones don't do things, people do. And two, there are going to be some things that won't be possible (ie, when phone has no signal)
