Is there a legal grey area when it comes to at-will employment?

I work in a 24/7 restaurant and I just can't take it anymore, I'm constantly working until 1AM and then coming in for morning shifts, or working overnight and coming in for day shifts. This week, Monday had me 4PM to 1AM, tuesday 6AM to 4PM, then I came back in to cover 10PM to 2AM, and back at 6AM, etc etc.

Is this just how at-will employment is or am I a pushover? It's been like this the past 2 years here

I guess not! Either that or I'm too stupid to know them, for the love of God who do I report to? I worked 4PM to 3AM and here I am getting ready to head in at 10AM...I just think if your business can't run without having people live at your store then the business model needs to change, ffs
