I've noticed a trend to where she is extra negatively manic towards me when her vacation approaches and she is extra bitchy when she returns. My interpretation of this is she is insecure of leaving work with me in charge, not because I will fuck up in her absence but more like her not liking the fact that I will be taking her place. She's taken a few verbal jabs at me with one reccently being along the lines that I appear too calm but she knows that i'm probably busy. Nobody that works directly under her likes her, everyone smiles to her face but rolls their eyes behind her back. What's her problem?

Who knows or cares what her problem is? None of us are her therapists. Your wages do not depend on diagnosing her issues.

Start keeping records of her behaviour though. Note that diaries and journals are considered to be legal admissible-in-court kind of evidence. Keep a daily diary of her interactions and how she treats you, and once you have enough of an evidence, or once she starts doing things that definitely cross the line in workplace harassment, take a copy of the diary to HR and/or a lawyer that specialises in employment law, because let's face it, shit will blow up in your face eventually.

I've spoken to hr once before and they gave her the heads up. So I should probably just lawyer up when the time comes and skip hr.

What specifically should I keep track of?

This person is a complete mess, like mentally unstable, there have been many people who quit because of her and I've been praised for being able to tolerate this nutcase so well for so long. She does have a teachers pet, she loves ppl that kiss her ass, serve her, or does her favors.

Things that happened when you or others were around her. You say you noticed her behaviour gets worse around her scheduled leave, so make especial note of that.

E.g. xx day, Daisy who works in accounting was in tears because boss allegedly told her this something.

On xx day boss threatened to fire x y and z for scheduling conflicts when they were pre-approved back in oo day.

On xx day, boss confirmed that she wanted these 3 things done for the project.

On yy day, boss backtracked on these 3 things she cleared on xx day.

You will also start wanting written confirmation from her (emails are sufficient) about certain decisions or directions a project might take. You've probably worked with her long enough to be able to have gut instincts about what decision she's going to upturn and whatnot.
