How do I say no to my girlfriend? Our relationship is great but between her and work I feel like I have very little time for myself. It's not even about her, I'm just the sort of person who never dated or went out before meeting her, and I need time for myself. And I have personal projects I want to work on. And every day we are together we HAVE to go out and eat, and honestly Subway is really not expensive but this shit adds up.
Not only that, but for the summer she's living at her grandma's- her grandma is a mentally ill hoarder who refuses advice/help and lives in an isolated part of town where it takes forever to go drive to anything. And the place is a fucking mess. To my girlfriend's credit she's worked hard cleaning it but all the ants are roaches (or as the granny likes to call it, waterbugs, because denial)
So yeah, how do I say no without either sounding like a dick or like I need "space" rather than just "me time"?

You've got two different issues here.
"I need personal time to work on personal projects and generally be alone" is legitimate, and you can tell her that.
"I don't like spending money on her or doing things that she considers important, like helping granny" is more selfish and disrespectful of her.
help and spend some time with her, but when you are not feeling it just say you have plans or you're doing x.
