I am 18 years old and starting my senior year of high school next fall and I plan on applying to some high level universities, however I had one really shitty semester back in my sophomore year and it brought my cumulative GPA down considerably. Now I did very well on my SAT and I've taken several AP courses (more than most universities prefer), however I was curious if Universities may consider excluding that semester when considering be for admission. Anyone have any idea?
They won't look hard into anyone. They get thousands of applications. Just maintain a high average, do good on ur APs, and be a minority

Your story is far more common than you think, and admissions offices are used to spotting odd patterns (like lots of As but a low GPA) and finding the one bad semester and then just writing it off.
If you get to an interview or a personal essay you might mention the one bad patch, but don't make a big deal of it.
