Other than that, I don't see any point in mentioning the money. Her just knowing that you liked spending time with her will be thanks enough.

Well i personally wouldn't mention the money, i also don't see the point of the card. If you can spend some time with her before she leaves and say it in person.

And call her from time to time anon, even if its just to say hello that probably means much more than "thx for the cash granny"

If you are white and not trash, you absolutely must write a thank-you note. I would mention the money as a gift:

This. Thank-you notes, for whatever reason probably originating in Victorian Britain, lie at the heart of Anglo culture. That means that Five Eyes countries (US, UK, CAN, AUS, NZ) and some former UK colonies make sending thank-you notes (not necessarily cards—nice paper with an envelope will do) a marker of cultural belonging and class status. It's one of those things you have to learn to fit in with middle and upper class society in the Anglosphere. Failing to send a thank-you note WILL be noticed.
