I've been talking, strictly platonically, with a girl for two months straight, day and night. We both really enjoy talking but I'm afraid I won't be able to keep this up when I get back to uni.
Is it better to slowly taper off a conversation with someone over time or cut it off abruptly? Neither of these choices sit well with me but I know I must make one.

She's already expressed concerns of not being able to talk to me as much. When I went on vacation last week she got real sad.

Then quell her fears with plans. Establish a schedule, connect via several sources of communication.
Her phone number, her facebook, her house address for when all else fails.
Sounds like a lot of both of your worry is that you'll stop talking to each other, but it also doesn't sound like you have a reason to stop.
So just continue talking.
