It just takes practice and experience. Once you've said no to temptation for a day, you realize it isn't that bad. Then next time you say no for three days, then a week, and so on. Very very few people can just hop on a fast like that without preparation and pull it off.

Willpower is a resource that must be cultivated and maintained. Nobody just "has it" as an endless supply. And people die after just a few days without water. 40 days? Yeah, they are drinking something.
