As something I could do for a hobby I thought learning a language would be cool, how do I go about doing this and what language should I learn ?

Whatever interests you. Don't learn a language because you think it will be useful, because it won't. I say this as a polyglot. Just pick a language you like.

What are you hoping for from the language? Improved job prospects, literature opportunities, chatting possibilities?
French, Spanish, German, Latin, Arabic, Japanese, Chinese, Russian all can get you work, which would make it fun as well as useful.
It's not really something you can just do as a hobby. Even the easiest languages take years of dedication to learn ILR 2 fluency unless you live in the country. It's all about constant repetition and immersion. Also protip don't even begin to consider Japanese / Chinese if you don't plan on studying for hours every single day.
Best place to start would probably be Duolingo. Finish their entire course on whichever language you want and then move onto flashcards.

As much as it would be a good thing to learn a language that is "useful" (however that is defined), you are better off trying to learn a language that you find interesting. Or at least find some middle ground between learning a language you think is interesting and has some use. Learning a language is not an overnight ordeal. You need to have interest and motivation to want to continue learning a language. Just because it might have some uses does not mean you will stick though to learn it.

I am currently learning german and I consider it a very good choice. If you want an easy language to learn, I would choose Spanish.
