You have light attack and heavy attack and you can spam the former consequence free unless you're retarded, dodge or parry depending on if you're against monsters or humans respectively, and occasionally mash Quen since most other spells are garbage unless everything else has been massively buffed since I last played. It's still a good game especially relative to what else is on the market, but every step forward in the series has made it simpler as it attempts to become more accessible.

I'd hardly count oils as a combat mechanic. You make a note of what the mob is, slap it on your sword, and do x% more damage for y many swings. In that sense I preferred Witcher 2, because you had to predict what you would be dealing with rather than just sorting through your potions and oils in the middle of combat.

I am. The leveling system in Witcher 3 was absurdly broken and you had to play it on Blood & Broken Bones for something equivalent to normal difficulty after an hour.

You know they refilled every time you rested for an hour assuming you had alcohol, right? You build it once and it's done with. Buying a recipe from the cranky alchemist is not complex.
