Me and this girl haven't done much of anything yet, just studied together some yesterday. She's a really quality person so even this early on I'm worrying about screwing things up and ending up as just a friend like I have in the past. How do people naturally increase the intimacy or whatever to make the girl they want to date realize they're trying to date them and not just be friends?

You express your intentions, there's no shortcut to it. Ask her for a date, if she rejects and that deteriorates your existing relationship, you most likely dodged a bullet.

Is there any specific wording I should use? I've asked and have gone on things that I thought were clearly lunch/dinner dates before, but recently I've realized how many orbiters in my university do the exact same sorts of things with girls and never get anywhere.

There's no single correct answer here, but you have to show her that you're in it for real. How long have you known/worked together? If you've recently met, take your time, observe her for hints, but do not hesitate when you have the chance to ask.

Don't be afraid of this, you just have to make it clear what you want from the date, and judging by your posts there shouldn't be a problem with this.
I got myself a date for tomorrow after being in a somewhat similar situation as you. You won't lose anything if you tell her you want to date, just say fuck it and dive head first. That's how I went.
