Hey guys, my professor offfered to do phone interviews for jobs I'm applying for. I never technically worked for him, but he oversaw an independent study I did in which I performed quite successfully. When I'm applying for jobs, how should I reference him as someone willing to do a phone interview? Should I include him in the resume, or a cover letter? I have no idea

That would be a reference. He would go under references.

Under a section called "references". Or give his phone number directly with the entry in your resume talking about your role in the study he oversaw.

Hey, so for most jobs I've seen they accept cover letters, resumes, and then if it's an online application, they have a section to include references. However, some jobs just have you email in a resume and cover letter.
In this case, I'd have to include the reference under either a cover letter or a resume. I have other references, but they wrote me letters of recommendation that I usually attach as well. So as of this time, I don't have a reference section in either the resume or cover letter.
I've never had someone offer to do phone interviews. So in this case, I'm asking where should I add this in either the resume or cover letter. Thank you

You don't include references in your resume or cover letter. The employer will ask for them at a later date as you progress through the interview process.

References goes at the end of your resume. Check a template. Usually people write "available upon request" but now you have a name to add so that would be eye catching.
If its a professor im guessing the work youre applying for is relevant to your field? If so they will definitely want to talk to him. If its on there, they will call. You dont have to be flashy about it or set up neon flashing arrows about it.
Just have it there and they will call.
