How do you get over someone that you thought would be your forever? Is there hope of getting back together and if so how does that work?
There's no hope of getting back together and it actually being fulfilling and good. There is hope in that you will eventually come to terms with the fact that it's over, and be able to feel deeply about another person again.
the highschool girl at my job who I would totally do but I don't want to deal with the potential legal troubles?
It depends. If they were your spouse/significant other for years and you had a meaningful relationship, sure there's a chance you can try and work out your differences.
If it's a one sided affair where you crushed on them hard for like a few weeks or months then move on. It doesn't matter what you said and did and it won't matter now. The only thing perfect was your fantasy of it.

By realizing no one will be my forever, because I don't need another person to be the only thing that matters in my life. Lots of things already do. Lots of other people.

Idt you ever truly get over someone that you thought would be your forever but the pain and misery eases with time as you learn that life continues without that person. As far as getting back together, the hope is what makes us strive to be a better person that will enable a better relationship either with that same person, or someone else.
