If I dropped out last year due to gaining employment. If I go back this year do I have to do the whole degree from the start again?

Are we talking about high school or college, US, or rest of the world? I can't read your mind and one size fits all answers don't exist.
For college in the US -- If your college is regionally accredited then those credits are good for 10 years. At the particular school, you are afforded catalog rights. Meaning, they can't change graduation rules on you -- you're grandfathered into what year you started.
Now. If you left your college, and there's a clause that says you lose privileges for leaving, then that's when you have to go sit down with a counselor and figure out what, if anything, changed for you. This is all assuming, that they LET you resume. Public unis in CA require you to reapply for admission after leaving for a year, unless you ask for some type of medical leave/exception and it's granted. Private unis can do whatever they want.
