I've had this fantasy for years where I just take my amp out into the middle no where and just jam my guitar for hours. Any ideas on how I'd go about doing that ? without getting into trouble and shit

Homeless people do this all the time. Just play in the parking lot instead of in front of the doors of businesses, and there's a less chance that they'll kick you out.

pretty much just go out and do it, if police come they likely wont arrest you, they'll ask you what you're doing, you'll explain and they'll ask you to leave.
