So I basically have two years to get my SAT as close to 1600 as I possibly can, and my ACT as high as I can.
I know with this amount of time I can get extremely high scores if I apply myself, but I need some material. Does anyone have experience with these SAT prep courses online that could recommend one to me?

I only used them for LSAT. But Princeton review is the most popular and probably best resource for all undergrad and grad school test prep. You have plenty of time, just work through one of their books.
Use the bluebook for practice tests
I taught an ACT prep course for two years. The most important is to learn good test taking strategies, not so much what is on the test. The ACT has no penalty for guessing, so don't get bogged down on questions you don't know. Also, with most standardized tests, only 2 of the possible answers are close, the others are clearly wrong, so a bit of logic makes every question a 50/50. I got a 29 in highschool, but after a few months of teaching it I got up to a 34. Practice tests would be your best tool, just make sure you follow the time restrictions to a T and learn how to maximize the time you are allotted.
