What are some ways to fuck with an awful neighbor without it being traced back to me? I live in an apartment complex. Bitch stomps 24/7 and doesn't have a job, just sits at home and screams/gossips on her phone all day. She's black. She called the office and complained that I take showers at night and that it's loud.
Looking for pranks and ways to harass her. Things like ordering pizza or something, except I think the pizza thing hurts the pizza company more than it hurts the neighbor.

Why not take the diplomatic route?
If she's stomping, and you're in an apartment, then it isn't likely only affecting you.
Perhaps ask tenants on other floors, or adjacent to her whether or not they've had problems, and whether or not they'd be willing to speak out against it to the landlord.
You start blasting music and all that, and you're just giving her an excuse to try and get you in trouble.

I wouldn't do the music thing, because then you're just pissing off every other person in the complex, and you're no better than she is.
If she thinks you taking a shower is unreasonable noise, just fucking rat on her for the same damn shit.
But personally, I'd just shrug and move on. You're gonna exert much more effort than is really warranted trying to get back at a dumb bitch for being a dumb bitch, and probably just piss off your landlord having to deal with dumb petty feuds.
Move on or move out.
