Seriously, who cares? Women do manipulative shit as a matter of course, we might as well start doing the same. Besides, they made the offer, so they clearly don't mind. The real question is can you get along with her whole family? Are you ok with compromised privacy? Do you have a back up plan/a place to go on short notice?

I don't have a backup plan. But her mom specifically stated to my gf that if we broke up during the time that she wouldn't kick me out until I can get an apartment and get moved in.

Just try to live that experience. Even if a break up happens, you still get to live with her, be part of a family and stuff. Maybe you feel you love her again once that happens?
