I like the greek plays recommended early. Even knowing the reputation of the greeks, it really grounds you, makes it all less intimidating, knowing that dick and fart jokes have been around for thousands of years, and are considered "great".

Hemingway is one of the authors that I always suggest to people who want to start reading more. Farewell to arms and The old man and the sea, especially, were amazingly easy to read for me.
You could also try with The Catcher in the Rye by Salinger, it's a super easy to read book, or anything by Steinbeck.
Stoner by John Williams, 1Q84 by Murakami and The unbearable lightness of being by Kundera are also very nice and easy books to read.
The Hitchhiker's Guide to the Galaxy is amazingly fun, 1984 is super easy to read too.
It really, really depends on your taste. Go to a book store and go through the covers, and see if some stories intrigue you.
Philosophy as others said is a good option, or that list of 10 years reading plan is full of really amazing books.

It is very long but I found the prose very smooth, I thought it could be a good option for someone who doesn't read much.
I also enjoyed Murakami short stories a lot, if OP wants something shorter.
In general I think short stories are a good option for someone who is just starting to read, so maybe Joyce, Flannery O'Connor, Bradbury, Hemingway.
Roald Dahl wrote some short stories for adults that are amazingly funny, which I loved a lot.

Read the fucking edge chronicals. I know they're childrens books, but that makes the language easy, like you wanted, but the themes in the books are mature enough.
The edge choricals are unlike any other fantasy series I've ever known. Very unique, compelling and mind bogling sometimes. The separate series set in the world cover the adventurres of several people decendent from one another. Over the series you see the world transform through time unlike any other. Its fucking awesome and too few people know of it, its a shame.

Yeah short stories are a good segue into reading more. I picked up a lovecraft anthology on sale a few years back and just ate it up.

Read some earlier Stephen King books, they are great and easy to read: The Shining, The Stand(this is far the best), Misery etc.
Also 1984 is indeed a very good read. I'd rec these over Hemingway, he's great but I think some people can't appreciate his books.
