With such things, the level of incompatibility increases with the extent to which the involved parties take thing X (in this case religion) seriously.
If you refuse to marry in a church and she will not date a man unless he marries her properly in church, there is a lot of incompatibility.

Of course explicitly seeking out mennonite women as a non-mennonite is a stupid idea, regardless of whatever a mennonite is.
