Why would a girl seem not interested at all when I text her, but crave my attention in person but then occasionally ignore me on purpose? This makes zero sense to me. She also talks about me with other people quite a bit. I don't think she knows I like her... She used to be rather rude to me but lately she's been more attentive to me and thanking me more.

Regular female activity. Looks like you are in the worst spot on her attention graphs. In between paying for everything and only talk to in emergency. Be up front about what you want with her or let her farm your attention when every other guy she knows has something better to do than waste time feeding.
Same situation, she barely if ever texts back, but she constantly seeks my attention and always mentions me and asks where I am to my co-workers. I came to the conclusion that she just likes the attention and has zero interest in being with me.
Because texting isn't real conversation
Just because it's possible now doesn't mean you need to be in constant contact with another to be in a relationship
