I buy big plushies almost every time I have to buy a Christmas gift for a girl, no matter whether I'm interested in them or not. They always seemed to like it. Alternatively you can buy some clothing accessories like a scarf or gloves.

If you have no idea what gifts to buy it's better to walk into the first gift shop you see and buy some random thing than give a gift card.

You can always get her something girly like special soaps or moisturizer. These are pretty safe bets. You really want to surprise her though, find out what she really likes that says you put in a lot of thought but at the same time doesn't cost much. I used to do this with my girlfriend, but it's perfectly acceptable for a platonic relationship.
