This is a stupid question. Figure out what you might be interested in a do research on job in those fields. You didn't even list what kind of apartment you'd want
Many high paying jobs, or even decent paying jobs are stressful.

medicine is probably a good choice, just dont become a doctor, become a dentist instead or somethin else where you dont have to handle dangerous shit
law is also a good choice you could get into a ship that takes produce around the world if you study international law
coding and engeneering are good choices too, i guess it kind of depends more in what you want to do than what you want to study, hell go into pharmacy thats chill

Human resources, public administration, public health policy...
Well there are plenty of comfy stress-free jobs out there, but most of them are somewhat niche. You can find them in most if not all fields or even with no degree at all.
It also depends on the are you live in, what opportunities you have and how good a job you need to live an independent life.
If you want a well-paying, low-stress job your highest chances are mathematics and statistics with finances or CS. As anons pointed out some fields in medicine are stress-free, but getting there requires a lot of work (and stress), so I wouldn't recommend them to someone who just wants an easy life.
Most STEM fields also have a lot of opportunities for well-paid stress-free jobs, so you really have a lot of choices here. Figure out the fields you have some interest in, look up what jobs are available with degrees in these fields and how stressful they are and make your choice.

HR can be really stressful, depending on the employer. Some have it easy, true, but in many companies they're working 10-12 hours a day under a lot of pressure.

CS is not low stress lol. At least not for me. Maybe I'm just a high stress person.
Mathematics -> actuary ? Accounting? Library science?

Literally every job can be turned into an endless grind by a terrible employer, anon.
