How to tell if a guy is a Muslim extremist

Maybe because you're only the security, why would they be polite with you? They want to do business with your client and it ends here. They might be suspicious too, who knows?
You can't really know that they're extremists beside talking to them, even though they usually wear long beards, shave their mustaches, their pants goes middle leg and wear the kamis (the long dress?). But that doesn't mean they are extremists, just that more extremists are fashioned this way.

Being polite is usually part of business. Not matter if you are directly or indirectly involved. Who's to say I wouldn't want to make an engagement ring one day and think back on who I know to buy a diamond and want to skip my Client as a middle man and buy a diamond directly from them. It's not like he had to go out of his way to answer a question or he was busy. Hes watching TV in the back 90% of the time

I live in a place with many muslims. To find out how ''extremist'' they are I think you have to hear them with their muslim friends. Where I live one topic they talk about a lot is how much they hate Germans and Germany. They will talk about Germans with a sense of arrogance. They talk about this in the open (in my school) but I could imagine grown ups would keep that kind of talk behind closed doors. Especially in the USA. When I say ''extremist'' I actually mean fanatic. They are brainwashed by their religion and their parents to think lesser of non-muslims even if they live off of their money. But if you have a feeling they are a bit standoffish it could be because you're white and they look down on you or feel threatened by you. Where I come from there's a saying that muslims get their hate for us in with the breastmilk (from their parents)

Muslims who live in middle class neighborhood: might still be very religious but somewhat polite and have some sense of intelligence
Majority of them live in ghettos though. Some of them go on with their days in the ghettos without hearing or talking one word of German
