Nothing. YouTube is a private company and has the right to do anything it chooses so long as it doesn't violate the law. The videos you're describing almost certainly fail to meet the legal standards for defamation. Even if you believe that to not be true you would find yourself spending thousands or tens of thousands of dollars on legal fees and very likely losing in court. If you live in a state with a strong anti-SLAPP statute, you could find yourself facing a judgement in the tens of thousands of dollars and undergoing the hell that is a debtor's examination.
