So I'm working one job that is just okay for now and a friend of mine recommended me to his boss for a much better job.
I got an email from said boss saying he thought I'd be a great fit and saying he wanted to schedule a time for a phone call or interview.
I replied saying I'd be delighted to talk with them and I told them when I'd be available during the weekend and next week.
Haven't heard back and I got that email on Tuesday. It is now Thursday night.
Maybe I'm just paranoid but I sent that reply very late at night because I work late at my current job. What if it got lost with the morning's batch of emails?
How long is appropriate to wait?
I really want this job, pays almost twice what I make now and at a much bigger company with better... in general everything.
I thought I might wait until Friday and send something Monday of I don't hear anything. I don't want them to forget about me. It's a competitive field.
This job would be a life changer for me.

Your plan as of right now is fine. As a store manager, I often don't get around to my emails for 2-4 days if I'm busy with essential stuff. Calling is always better than a second email if you can get in direct contact with them, I'd try before lunch tomorrow given the times you've stated, between 10-11am. If you can't get in contact with him, send another email early afternoon on Friday and then try another call early Monday.
