How do I stop making tasks out as really difficult? I decide I want to do something, but I start building it up in my mind and it gets to the point where the task becomes this mountainous thing that I can never accomplish.
I end up getting pretty depressed and defeated before I even start.

Just fucking start and stop ovethinking it. My girlfriend does this and it drives me mental.
1. Stop being a bitch
2. Stop being a perfectionist
3. Set a time limit or Count down from 3 seconds
4. Start task
Stop trying to accomplish the goal and start trying to work on the goal.
If you think of the perfect scenario in your mind then you'll naturally feel like shit when problems get in the way. If instead you simply make it your goal to start, then nothing stands in your way and you'll get moving.
Stop thinking and start working, repeat until task is done.
