I got let go as a software dev. I have ~2 years experience, self taught, I have a IT associates degree. How do I find a new job?
I got the job from the first application and I was hired after 2 interviews.
So far I've been told "we didn't select you because of your education profile" and "not enough experience with technology x".
How do I communicate to the employer that I don't really care what tech they use and that I will learn and use whatever they want me to use.
You could go to university

I was retarded as a kid and barely made it through high school science classes and maturity exams. I didn't qualify for government paid uni education, hence the associates degree. I've also worked with uni graduates and they weren't substantially better at developing android, ios, windows applications and websites than me.

I'm surprised you haven't been recruited yet.
Education usually doesn't matter.

You're not even going to get to the first screen like this. Do some preliminary research and teach yourself some new languages like Ruby. Make a Github account and contribute to whatever project you can work on or work on your own projects.
I work in recruiting.
