A day and night cycle depends solely on how you want it to cycle. Via actions or through something that pushes the time forward (Sleep button)

If you were using a sleep button, set up a global variable initialised at zero then as the day progresses, add 1 to the variable up until the player clicks "Sleep", the variable resets and they're taken to the start of the day.

Quick example -
$Time = 0

Label Morning:
$Time += 1
(Interact with something)

Label Midday:
$Time += 1
(Interact with something)

Label Night:
$Time += 1
(Interact with something)
(Sleep button becomes available)
jump Sleep

Label Sleep:
$Time = 0
jump Morning

That's a barebones framework that would allow you to have a witch trainer type of day cycle.

What I'd suggest doing is to download a bunch of Renpy games, drop them into your renpy games folder then run the script. If it's unencrypted you can see the script for yourself and learn from it.
I would have released an open source version of fairy tale but it's by far the most cluttered game in probably the whole /aco/. There's no sense of clarity and even I get confused.
Use BB to get the basics.
