It's merely conjecture but given what we know of her and knights like her it'd be safe to assume that she's beyond gone at this point. I'm not sure how her being attached to royalty would have any bearing whatsoever on the degradation of her sanity/humanity as an outrider.

I would argue her body language (which you pointed out) is more a confirmation of her lunacy rather than her defiance of it. In her state of mind she's simply falling back on muscle memory and sorting through the recollections of motions and behaviors she was accustomed to before higher level functions and thinking were impaired.
