The basis is when an outside influence offers a person so much power it changes their personality.
After that it's pretty broad.

Examples include:
Just pumping demonic power into someone to corrupt them.
Teaching an innocent the forbidden ways to get them hooked.
A nun or a witch dabbling with the forbidden and getting more then they bargained for.
A magical girl or ranger getting turned to the side of evil.
A magic trinket slowly twists the person carrying it without them knowing.
Et cetera.

Willingness goes all the way from rape (pretty boring) to not knowing it is happening, to actively seeking out corruption.
Powerlevels go from gyaru (plain slut) to world destroying level.

An interesting note is that corruption doesn't have to be evil. It just needs to be a change. So corrupting a demon into an angel is also possible.
A favorite theme of corruption is also one of betrayal. Either betrayal of the self (that internal monologue that goes from hating it to hating that you love it)
or betrayal of others, like friends, family or society.

Corruption isn't the same as mind control, as the person who gets corrupted generally keeps their mind intact. It does often overlap with mind break, transformation, moral degeneration, costume change and others.

Personally, my favorite kind of corruption is the slow and subtle kind, and ideally ends with the corrupted person keeping up the charade of being normal so as to lure more of their friends/family into a trap.
