It was around this time that Bleach lost its charm, at least as far as I'm concerned.

From an unbiased perspective, no. But that fight is still one of my favorites of all time.

It was a nice to see a protagonist so clearly out of his league. I think the only moment in the series that did the same thing for me was when Ichigo had his whole spiel about friendship and never giving up and then Yhwach threw his entire belief system in the garbage when he broke his bankai and proceeded to tell him that no matter how hard he tried he couldn't beat him.

The fight in an of itself was visually striking (cute and hairy emo batman fighting Ichigo to the death under the crescent moon? take all of my money) but nothing stellar as far as fights go technically and choregraphy wise. The movie and anime versions had excellent animation though.
What made it so compelling, the real star of the show was Ulquiorra's character development and its culmination in The Heart scene. It was more about him struggling with and accepting his humanity than anything else.

When it comes to shounen, there's always at least one fight that just encompasses the feel of the entire series. It's the fight you think of when someone mentions the name of the series.
The go to example of this is Goku vs. Frieza. Intense, memorable and drenched in the world of the story.
Another would be the first Naruto vs. Sasuke fight from Naruto (and the second one for Shippuden).

Bleach was lucky enough to have at least two: Ichigo vs. Byakuya and Ichigo vs Ulquiorra.

What a lot of people miss in their comparisons between SS and HM arcs (besides their obvious similarities) is how these two fights juxtapose each other.

Ichigo vs Byakuya is the idealist's preferred fight because Ichigo both defeats a top noble in the SS hierarchy but also causes Byakuya to rethink his ideas on justice.

Ichigo v Ulquiorra is more pessimistic, as it's Ulquiorra's worldview (the strong defeat the weak) that Ichigo is forced to accept.

Eh, not really it was a lot subtler than that though. Ulquiorra was trying to teach him despair and while it's true that Ulquiorra's pushed this survivalist view, Ichigo never accepted it or adopted his point of view. It's just that the outcome of the fight kinda proved Ulquiorra right.
Also the fight is interesting because the roles of protagonist and villain are switched mid fight. Both character's values are revaluated. Ichigo loses his humanity to become a beast embodying a warped version of his instinct to protect, an instinct that seeks to kill and destroy without regards for anything else, not even the ones he's supposed to protect (Orihime and Ishida), and Ulquiorra ends up being a hero, standing up to fight and protect both Ishida and Orihime from Ichigo's fury, which would have undoubtedly killed them both had it gone on any longer. Even though it would have been better for him to just lie down while Ishida and Orihime are getting killed and wait for the storm to pass as he takes his time regenerating his lower half.
