She's been wounded plenty of times. Like when she was caught by surprise by three samurai without her swords. She nearly bit it there.

When against several enemies, she's been shown to have cuts & breathing pretty hard. She's there just to be your window in to the historical events unfolding.

Going on with the story in the manga she get wounded more often and one time she is even tortured and another time she is hurt so bad that she is near killed.
But if the anime don't get at least another 2 season we will never see this.

It depends from TV ratings and how well merchandise sell.
It's a low budget show so there is a possibility to see all the manga adapted.
