Avenger took control of Shirou's body during the night in F/HA because he has no real physical body. In Grand Order they expanded on this idea by having Servants such as Zhuge Liang and Ishtar being summoned into Wavers and Rins body respectively. Both Zhuge Liang and Ishtar can't be summoned in physical form for an ungiven reason. Usually the Heroic Spirit dominates the personality of the host like in Avengers and Ishtars case, but Zhuge Liang chose not to, so Waver is in full control.

Mashu's case is a bit different in that she's a holds Galahad's soul in her through some unexplained experiment, turning her into a Human with a Servants abilities, a Demi-Servant. I guess Sieg could fall under this category as well once he gets Siegfrieds heart.

The whole grail system was actually intentionally rigged in favor of the knight classes, as they were the ones that were supposed to be summoned by the three founding families. I remember being so enthralled by the idea of Apocrypha both before and after I finally took the plunge into the original Fate.
I just loved the idea of "heroic" spirits working together, rather than just against each other and held out for an anime before daring to peek at the novel.

Apparently this isn't going to be the smoothest ride, or they might even smooth out the rough points from the novel, but I'm pretty happy with what I've gotten so far (even after reading the manga and LN to where episode 1 ends)!

Keeping the opening on repeat is a good time too (those lyrics are some of the most perfect for a Fate OP ever). But do I hold off on reading Strange Fake until this is over?

I don't even have the time to properly play FGO and I still enjoy the Fate series. Surely after all this time you know what you enjoy about it and what you don't, barring new content.
Senpai, it's well and fine to want to keep up with FGO for the events, plots points or even just new Servants who are introduced in it (and F/SF), but there's no need to be like this. If anything, you're better off wracking your brain writing your own Type-Moon work just for the enjoyment. Surely there would be something soothing about that.
That, or just take a look at other series. I started Fafner recently and am enjoying it. Besides, unless you can read Japanese you're waiting on the community to translate FGO's story so there's not that much of a need to stay up-to-date by-the-minute if what's keeping you playing is the plot rather than enjoying the game systems. Be more kind to yourself.

Mahoyo was written long before. And if anything, Nasu was visibly lazy to change anything, with excuse that "it doesn't fit into story". Realta Nua was PS 2 port, so there was simply rating condition.
And besides that TM simply released nothing. So it not really that they abandoned eroge brand. They just focused on different platforms. Next real thing that can contain something is Tsukihime remake, and that still hasn't decided.
