Well, the fan translator has only been doing the web novel, so no art there.
As for the Light Novel, it looks like it just hasn't all been scanned, I guess? The publishing only started earlier this year, and there are only two Volumes.

Also, why are the Ghouls Grey? Weren't they supposed to be brown-ish or something?

They were described as grey/brown in the text, but that may have been modified by the translator by the time I read it. I know he likes to make retroactive fixes for more accurate translations often, so it may just be the case that the original text was less clear and assumed just brown.

You mean color spreads? If so, no, unfortunately they don't have those.
They have actual illustrations in the novel, but they're all monochrome.
The concept art is also separate. Which is sad because that's basically at the publisher's whim if those get posted or not.

There's actually a guy on the animesuki thread that'll just give you the illustrations if you PM him.
He asks you not redistribute though, which I tend to respect.

Also, they're totally supposed to be gray.
I believe it was described as a gray-ish brown, specifically.
