As someone who's never really read or watched this series, I'm genuinely curious - How the ever loving fuck do you make 1000+ chapters of a manga about boxing without it getting stale?

Also how popular is this series in Japan nowadays?

It is stale. A lot of the excitement comes from watching the other boxers and seeing their stories play but Ippo himself is probably one of the most boring characters in the series despite being its main protagonist.
