Blood doesn't actually stick to knives all that well.
Like any substance, it needs something to grip to, and properly manufactured steel is smooth enough that most blood will not stay on it, only small patches.
I mean, think about when you are eating. You typically don't get much in the way of sauce stick on your knife unless you drown the thing in it.
In a recent documentary series I have seen a sheath of a fairly large hunting knife that had only a tiny amount of blood inside despite the fact the thing was used to stab and slash two different people, and not wiped before being put back in there.
