Isekai has a lot more potential in variants due to them have a lot more freedom compared to HS battle shounen, the problem is that the nips stick to very few variants, like the one using game stats or OP MC because he was summoned.
Even then those can still be good if they have something uniqye, Konosuba is an example of how it's uses game stats yet still good because of the comedy and rather unique cast and story

It doesn't really matter that much where your iron comes from but the process matters how you get it out. The Japanese used an oven called Tatara which produces an end result comparable to medieval bloomery ovens. The idea that Japanese iron was 'worse' than European iron is a myth. Throughout most of the middle ages, Europe forged weapons in quite a comparable manner as Japan. Smashing the bloom, grading and faggotting the pieces by colour, forging them out and folding them, and then constructing the blade by using the hard, carbon rich steel for the edges and the lower carbon content for the core.
Only during the very late middle ages (14th century onwards) Europe gained access to much greater content of high carbon steel, after the blast furnace and oxidisation techniques were invented. That's also when plate armour came up (which was impossible to be made before because they didn't have large enough pieces of high carbon steel).

The sword replica based on historical originals seen in the picture here were not the exception, they were the norm. If you attempted to make an early medieval sword in any other fashion from bloomery iron it would fall apart if you attempted to hit something with it.

Oh yeah definitely but I think the kicker here is that we're rarely given the perspective of the chef in this one. Aside maybe a very few fringe cases, he's like a part of the cafe the people are awestruck by --- disconnected and otherworldly. Izakaya dives into the process just a tad bit more by virtue of the setting and story itself, with the actual shop set as a permanent establishment in that world with one and only one existing entryway as well as the two MCs at the very least allowed to flaunt their characters more to the readers.
