I was going to debate that point, but actually, you're right.
Though instead of the ice magic, I'd use the Grayroad's statement about the time stop she used on herself, which indicates barely anyone could even cast the thing, and sustaining it for any amount of time would be impossible, which is what Infinity avoids. But the fact that she can even cast it means her magic is top-tier now.
I'd still say that making a spell that sucks things in could work with lower magic when you can keep it going as long as you want, but that's not really the main point here, so whatever.

From what we can understand, the close Escanor is to the sun, the stronger her gets.

So for his powerup, someone or something will throw him straight up, putting him at the peak of the peak of his powers, and then Merlin casts a magic to "freeze daytime" for him at that state, that will stay that way forever.
Or the cheese version: Through some convoluted bullshit Merlin becomes "his sun", and he gets stronger when he's near her.
