Out of those you mentioned I think only Zetto is as good a character as Bouya and even then most of his character development happened in Worst and not Crows.

I never really liked the Ebizuka Trio apart from Makoto and Rindaman is great but not the kind of character which could move the story along on his own.

There was that one story when he possessed his own body for a day to recharge it and everything went to shit. It's too bad they couldn't work that in, but with only 5 eps focused on ghost adventures, it wouldn't have been as effective since it didn't feel like he was dead for very long in the anime.

Also desu sayaka's story in the manga was way more interesting than simply being some weird emissary from Koenma sent to judge if Yusuke was worthy of coming back to life, especially when that judgement was basically already cast when Botan took him to Koenma in the first place. The part when Sayaka is ragging on Keiko makes a lot more sense from the perspective of some little girl ghost who's jealous than playing at some "oh if it's not a real relationship Yusuke isn't worthy of coming back" angle. Also it made the part when he throws the egg away more spontaneous and reckless, which adds more weight to it.

I'm not going to tell you you gotta like that first arc, I'm just saying I think the manga executed it a lot better by giving the stories more time and logically tying them together. By the time the anime started though it was pretty clear people were watching for the fighting so it really didn't make sense to stick to the ghost stuff for very long.

Frankly I think the anime handled the fighting way better, but the manga had a little more humanity to to it. That first arc contributed a lot to that by giving minor characters like Keiko and Kuwabara's friends more screentime. In the grand scheme of things it was unnecessary, which is probably again why they cut it in the anime, but I liked it a lot.

Also I'm pretty sure Atsuko chimped out on Yusuke's principle, just without her pimp in anime. I don't recall begging.
