More like, second sons of high nobility becoming kings, third sons of petty nobility and poor knights becoming landed knights, barons or even counts, and peasants escaping from their lords and land and being able to actually become townsfolk, and get a good job in a town trade, or join a noble's household as a man-at-arms, majordome, or any other of those sweet, non-serfs, jobs.

There was some social mobility, but nothing as extreme as Balin, son of a french blacksmith, becoming Baron and Knight of Jerusalem. Even in the film they had to make him a long lost son of an established noble.

Knight Templar, same with
knights Hospitaller, didn't use all the same armor configuration or helmet. The templar, being so rich, used a white overcoat with a red cross painted on it, and a red cross on their shield, but armor and helmet we mostly know them for is actually the most basic gear posible. If any piece of armor could be said to be mass produced during that time, it was probably a bucket helmet with eye slits and a cross painted over the nose bridge. You would see that particular helmet and similar ones all over the place, not only on Templar, while more "fancy" helmets would be worm by richer knights. Part of the reason we associate the bucket helmet with Templar, is that being a fairly easy and cheap helmet, it was worm by all manner of poor and destitute knights, mercenaries, and unlanded sons of petty nobility, that joined the crusades looking for fame and fortune, and this helmet was know all over the levant, and because we associate the Templar with the Crusades, we usually depict them with them on. Rich nobles didn't join the crusades so easily, especially at the beginning, and the rich Templar that came back to Europe would probably use something more elaborate.

Good question, I have actually never looked into that, of the early Templar members, I believe all but Fulk, count of Anjou, where landed Knights, and Fulk the only count, and evrybody else, including Grand Master Hugues, were landed knights.

The Templar where really good at the whole social mobility aspect, Fulk when from Count to King of Jerusalem.
