I thought the KNK movies and Ufotable's UBW adaptation were better than their sources but otherwise you're right.
I read them all, and it's nice to get further information if you liked the movies - especially Oblivion Recording because the adaptation was so garbage. There is a lot of weird magical shit going on that they didn't explain at length in the movies (for the better in some parts and for the worse in others) that the books go into lots of detail about. On their own I wouldn't say they're very special.
This is from someone who quite likes the KnK movies but is rather disinterested in other Nasu stuff.

You'll see some people who detract them but general opinion is they're solid. The Paradox Spiral movie alone elevates it above the novels

no. Too much of Shirou's character (and many other details) was cut and it's a much harder process adapting part of a multi route VN. Had good action but it's overall best as a supplementary material to the VN
