It's easy; follow the game's story from one character's perspective TO THE T, and include good fights between popular characters without making them look stupid unless that's their entire point. Blazblue had it sort of right, but it wasn't so well done.

depends on the factors which provide more fun to you or other watchers; interesting story, comedy, sakuga, strategies, romance, fanservice, etc.
fanworks demonstrate, imho, that in theory, this should be possible. This fight ( https://www.youtube.com/watch?v=G98Pn4JLDR8 ) has strategy, for example, this one ( https://www.youtube.com/watch?v=57Zwrx9a9Lo ) has beautiful pacing and is graphically pleasant (the final pattern, for example), this one ( https://www.youtube.com/watch?v=sLTpJJAraG8 ) has fast pacing at moments, and some sense of progress when the characters become tired. Even Salamander could be adapted into a 3-part OVA (and other shmups such as Gunbird and Mahou Daisakusen could be adapted into a manga), so a fighting game could also have a good anime version.

It didn't follow the game's plot at all, but the essence of the characters was mostly there. Also the fights were well animated, and those guys punched the fuck out of each other.

a manga counterpart would be Andy Seto's KoF comics, the characters quite often do things they don't do in the games but it's awesome, regardless.
They can just make a Melty HD anime when Melty HD comes out.
