How would K-on! be different if it was made by DogaKobo?

A straightforward adaption of the K-On manga done by Doga Kobo would have been decent, probably fairly popular, but ultimately forgotten and not as good as DK's better adaptions like Yuru Yuri. The manga wasn't as bad as some imply but KyoAni took massive liberties in their adaption that ended up improving the final product.

The first season maybe. Umaru, New Game or Gabriel are so generic and safe it's almost disgusting.

Are you kidding? Everything would improve, the only thing that was special were the Inu Curry segments.
They probably wouldn't have cripple fingers and extremely tiny feet anymore but it ultimately wouldn't be quite as good.
