At the absolute minimum, another 16 chapters or the equivalent # of pages. At max is harder to say, but probably not more than another 34 chapters or an equivalent # of pages seems reasonable.

Combined with the 11 chapters currently not in volumes, that would make 3-5 volumes left.

Then you haven't been paying attention. There's currently 11 chapters of FT not in a volume. FT volumes are typically 9 chapters. So we need at least 7 more chapters to fill out two volumes. However, the covers are currently running these "FT Memories" that are giving each arc a flashback cover. Assuming all arcs get one, that's 14-15 chapters depending on what's counted as an arc and if the Alvarez arc is included, and we're only up to 4. Assuming that we get 11 more, that combined with the 11 existing chapters, brings us to 22 chapters. Too many chapters for two volumes, but not enough chapters for three volumes (27 chapters). We'd need another 5 chapters on top of that, making it the 16 chapter minimum.

If the story goes beyond that, it'd need 9 more chapters to fill out a volume, bringing it up to 25 more chapters. If the story goes beyond that, it'd need 9 more chapters again, bringing it up to 34 more chapters. The story going beyond that doesn't seem plausible at the moment, making that the max.
