This is not easy to synthesize and requires both vastly more complicated science and exhaustive processing to generate.

Plus the people who actually care about smells are a niche audience. It's a much more visceral experience than simply seeing, which makes it difficult to portray anything that some might find unpleasant, because that unpleasantness would be felt in the extreme.
